CAFE DE OLLA-COFFEE IN A CLAY POT

5 cups water
1/2 cup coarsely ground dark-roast coffee
4 oz. piloncillo
1 1/2 cinnamon sticks
5 whole cloves
peel from 1/4 orange

Heat the cups of water in an olla or small saucepan over moderate heat.
When it comes to a boil, lower heat and add the
coffee, pilconillo, cinnamon sticks, cloves and orange peel.
Simmer for 5 minutes.
Add 1 cup cold water,
remove from heat and cover.
Let stand for 5 minutes.
Strain before serving.
