Fresh Fruit Ice


1 Envelope unflavored gelatin
1/2 cup Cold water
1 cup Orange juice
6 tablespoons Lemon juice
4 tablespoons Sugar
1 cup Strawberries --
peaches or other fresh fruit
3 Bananas -- mashed

Soften the gelatin in the water.
Stir over low heat until dissolved.
Mix in the juices, sugar and sliced fruit, and
place in the freezer until almost set.
Beat with an electric mixer on
high speed until creamy, but fluffy.
Cover and return to the freezer.
If fruit ice is made some time before serving,
it must be rebeaten and then returned
to the freezer for a brief period.


Orange Ice


3 pints Water
4 cups Sugar
1 cup Lemon juice
1 1/2 cups Orange juice
1 Egg white

Make a syrup of water and sugar;
when cool add lemon juice and orange juice;
freeze and when half frozen add egg white,
beaten well with sugar.
Thoroughly beat it with the ice,
finish freezing and serve.

Strawberries or slices of pineapple gently
stirred through just before serving
(if added too long before,
they freeze and are unpleasant to eat)
make a delicious variety.


Lemon Ice


1 pint Lemon juice
1 quart Sugar
1 quart Water
2 Egg whites

To lemon juice, add sugar and water,
in which the thin rind of
three lemons has been allowed
to stand until highly flavored;
when partly frozen add egg whites,
beaten to a stiff froth.


Pineapple Ice


3 pints Water
1 1/2 cups Pineapple Juice
4 cups Sugar
1 cup Lemon Juice
1 Egg White

Make a syrup of water and sugar;
when cool add lemon juice
and pineapple juice;
freeze and when half frozen add egg white,
beaten well with sugar.
Thoroughly beat it with the ice,
finish freezing and serve.

Diced pineapple can be added
just before serving, if wished.


Peach-Berry Ice


3 peaches
1 cup milk
2 teaspoons vanilla extract
1/2 cup raspberries
1 cup ice -- crushed

Slice the fresh peaches.
Combine in blender the peaches, milk,
vanilla and raspberries.
Whirl until smooth.
Pour over finely crushed ice.
