
Passion Fruit Margaritas
1 pound fresh passion-fruit
3 cups ice cubes
3/4 cup white tequila
1/4 cup sugar
Halve the passion fruits and scoop pulp
and seeds into blender.
Blend briefly.
Force puree through fine sieve
and discard solids.
In a blender,
blend 1/2 cup puree and
remaining ingredients
until smooth.
Pour into glasses.
If fresh passion fruit isn't available,
substitute 3 cups passion-fruit nectar,
frozen in ice-cube trays,
for the strained fresh
passion fruit puree and,
when ready to blend omit ice cubes.
