Queso Fundido con Champinones
y Rajas de Pablano
Melted Cheese with Mushrooms
and Chile Pablano Strips
Queso Fundido is popular
in the Northern states of Mexico,
where it may also be called
Queso Flameado.
The stringy melted cheese
is served in cazuelitas
and scooped up with flour tortillas.
A spicy salsa is added just before eating.
The following recipe uses mushrooms
and chile pablano
but fried chorizo
is another delicious possibility.
1 Chile Pablano,
roasted, peeled and cut
(about 1/2 cup)
2 tablespoons butter
salt and freshly ground pepper
--to taste
3 ozs. mushrooms, sliced
2 cups grated mild Cheddar
or
Monterey Jack cheese
flour tortillas
in 1 tablespoon butter,
season with salt and pepper
and set aside.
Saute the mushrooms in
the other tablespoon butter
until they begin to release their juices.
Season with salt and pepper
and set aside.
Lightly grease 2 cazuelitas.
In one place cheese and
half the chile strips.
In the other,
place the remaining cheese
and half the mushrooms.
Cover the cazuelitas with foil
and set over low heat until
the cheese begins to melt,
about 3 minutes.
Uncover and cook about
another 2 minutes until
the cheese is completely melted.
Add the remaining mushrooms and
chile strips to their respective pots.
Serve Hot
