Shrimp Cups

1 lb. shredded lettuce
2 1/4 lb. cooked bay shrimp


Salsa Verde
2 cups packed basil leaves
1 cup parsley leaves
1/2 cup toasted almonds
3 cloves garlic
2 teaspoons olive oil
1 teaspoon salt
Combine all ingredients 
in a food processor 
and process until smooth.


Chutney Cocktail Sauce
1/2 cup chopped onion
1/2 each diced red and green pepper
3/4 cup horseradish
1 cup ketchup
2 teaspoons lemon juice
Combine all ingredients 
and mix well.


Ginger Soy Sauce
2 teaspoons minced ginger
2 cloves minced garlic
1 teaspoon anchovy paste
2 teaspoons water
1/4 cup chopped scallions
1 1/2 cup peanut oil
1/4 cup seasame oil
1 teaspoon lime juice
1/3 cup rice vinegar
3 teaspoons soy sauce
1 teaspoon cilantro
Combine all ingredients 
and mix well.


Divide shredded lettuce 
among serving dishes; 
top with 3 oz. shrimp 
and desired sauce.
