
Stuffed Jalapenos
This recipe works equally
well with Anaheim chili peppers.
For best results,
choose Anaheim peppers
that are long and skinny.
4 oz soft-style cream cheese
2 tbsp finely chopped green onion
2 tbsp pimiento-chopped and drained
1 garlic clove-minced
12 jalapenos or
3 Anaheim chili peppers,
halved lengthwise and seeds removed
In a small mixing bowl
stir together cream cheese,
green onion, pimiento and garlic.
Spoon mixture into jalapeno
or Anaheim pepper halves.
Cover and chill until serving time.
Before serving Anaheim stuffed peppers,
cut into 2-inch bite-size pieces.
Makes about 12 appetizer servings.
