
Taco Burgers
1 cup finely chopped tomato
1/4 cup green or red taco sauce
2 tbsp snipped fresh cilantro
5 7 inch flour tortillas
1 4-ounce can diced mild
green chili pepper, drained
1/4 cup fine dry bread crumbs
1/4 cup finely chopped green onion
2 tbsp skim milk
1 tsp dried oregano, crushed
1/2 tsp ground cumin
1/4 tsp pepper
1/8 tsp salt
1 lb extra-lean ground beef
nonstick spray coating
1 cup shredded lettuce
or red cabbage
In a medium mixing bowl
stir together tomato,
taco sauce, and cilantro.
Cover and set aside.
Wrap tortillas in aluminum
foil and bake in a 350 degree
oven for 15 minutes.
Remove from oven,
but do not open foil packet.
Meanwhile,
in a large mixing bowl
stir together chili peppers,
bread crumbs, green onion,
milk, oregano, cumin, pepper,
and salt till well mixed.
Add meat and mix well.
Shape mixture into 5 oval patties
about 4 and 1/2 to 5 inches long
and 1/2 inch thick.
Spray the unheated rack of
a broiler pan with nonstick spray
coating and arrange patties
on broiler pan.
Broil 4 inches from the heat
for 10 to 12 minutes
or to desired doneness,
turning halfway through
broiling time.
To serve,
place a patty
on each warm tortilla,
then spoon some
of the shredded lettuce
and tomato mixture
over the patty.
If desired,
serve with salsa
and cilantro sprigs.
Wrap tortillas around patties.
