
Pan De Maiz Con Jalapeno
Jalapeno Cornbread
1 cup flour
2 eggs
1/4 cup sugar
1 cup milk
1 tablespoon baking powder
1/4 cup shortening
1 teaspoon salt
8 ounces cream-style corn
1/4 teaspoon garlic powder
2 tablespoons chopped jalapeno chile*
1 cup yellow cornmeal
1 Combine first six ingredients in a medium-sized mixing bowl. 2. Add eggs, milk, and shortening to flour mixture and beat until smooth. Add corn and pepper and blend well. 3. Pour mixture into a greased, 8-inch baking pan and bake in a 425 degree F. oven for 35-40 minutes, or until cornbread is golden brown. * Varied amounts may be used. Two tablespoons of chopped green chile may be substituted.
