Flan
This universally known Spanish
dessert is also a
favorite in Mexico,
tracing its origin here to the
days of the Conquest,
when milk and eggs were
introduced by the Spaniards'.
Egg custards are popular
in many cuisines,
but the signature
of the flan is its
caramelized sugar topping.
The basic recipe can be
contemporized by adding
2 tablespoons of instant coffee and
2 teaspoons of coffee liqueur.
