
Perhaps the most famous of the Yucatán’s dishes, Cochinita Pibil is often prepared for fiestas. 1/4 cup axiote paste 1 cup orange juice 1/3 cup lime juice 1 pound banana leaves 5 pounds pork leg 3 1/2 pounds pork ribs Salt to taste 1 quart water 1. Mix axiote with juices, set aside. 2. Lay banana leaves flat in a large pan. Place leg and ribs in pan over leaves. 3. Add the axiote paste and salt, and wrap the meat fully in banana leaves. 4. Add water to the pan and cover. Cook over medium-low heat for 1 1/2 hours. Serve with marinated onions.
