Arugula and Cilantro Salad

Arugula has a wonderful, 
peppery flavor. 
However, 
unless you grow your own arugla, 
or have a plentiful supply, 
you may well have to 
use extra spinach. 

4 oz arugula leaves 
4 oz young spinach leaves 
1  bunch fresh cilantro 
3  fresh parsley sprigs 
1  garlic clove-crushed 
3 tbsp olive oil 
2 tsp white wine vinegar 
  paprika 
  cayenne pepper 
  salt 

Place the arugula and 
spinach leaves in a salad bowl. 
Chop the cilantro and parsley 
and sprinkle them on the top.
In a small pitcher, 
combine the garlic, olive oil, 
vinegar, paprika, cayenne pepper 
and salt.
Pour the dressing onto the salad 
and serve immediately.
