Spicy Hot & Sour Shrimp Salad
1/2 pound fresh shrimp,
boiled and deveined
1/2-1 tablespoon nampia
(bottled Thai fish sauce)
2-3 tablespoons fresh lime juice
1/2 teaspoon ( or more ) crushed
dried red chile pepper
3 to 4 Thai peppers,minced
OR
2 to 4 Serranos, sliced
1/2 teaspoon sugar
2 tablespoons chopped red onion
1 generous tablespoon finely
chopped lemon grass
1 tablespoon chopped green onion
lettuce leaves
fresh mint leaves
fresh cilantro
Place cooked shrimp in a bowl.
Add fgish sauce, lime juice,
peppers and sugar.
Mix well.
Toss in the red onion, lemon grass,
and green onion.
Line a small platter with lettuce
leaves, fresh mint and cilantro.
Place shrimp in the center and
top with the fresh mint leaves.
Drizzle the remaining marinade.
