Pasta Salad

1  medium tomato, chopped  
1/2 cup seeded chopped cucumber 
2 tbsp chopped red onion 
1 tbsp olive oil or salad oil 
1 tbsp red wine vinegar 
1/2 tsp ground cumin 
1  jalapeno pepper, 
seeded and finely chopped 
1/4 tsp salt 
2 cup cooked rotini 
(corkscrew) or other medium pasta 
Bibb or Boston lettuce 
  
In large bowl 
combine the tomato, cucumber, 
red onion, oil, vinegar, cumin, 
jalapeno pepper, and salt. 
Stir in cooked pasta. 
Cover and refrigerate 
for at least 2 hours 
or up to 24 hours.
Stir before serving. 
If desired, 
serve in a lettuce-lined bowl
