Shark Salad

1 lbs Shark, poached, cubed 
1 bed Lettuce Leaves - any assortment 
2 ea Jalapeno chiles, 
seeded and finely chopped 
2 clove Garlic, pressed or minced 
1/2 bunch Cilantro, chopped 
1 to taste Salt and Pepper 
1 to taste Salt and Pepper 
4 ea Juice of Lime 
2 wedges Lime Garnish 

Cooking Instructions: 

Mix all dressing ingredients together. 
Chill one hour.
Before serving, 
gently toss fish cubes 
and dressing together.
Serve on lettuce beds. 
Garnish with lime wedges. 

Special Instructions:

In choosing your shark, 
the flesh should firm 
and should appear moist 
with no blood spots or browning.
If you are going to 
poach the meat yourself, 
cook the shark for five minutes 
per side per inch of thickness.
