Hot & Spicy

Four Pepper Salsa

 
14 Italian plum tomatoes 
-- drain
1 Med. onion -- thinly sliced
1/2 cup Coarsely chopped celery
1 can 4 oz Green chilies 
-- drained
1/3 cup Chopped red bell pepper
1/3 cup Chopped yellow bell pepper
1/3 cup Chopped Green bell pepper
1/4 cup Olive oil
2 tbsp. Red wine vinegar
1 tsp. Mustard seeds
1 tsp. Ground coriander
1 tsp. Salt
1 tsp. Pepper
1/4 cup Chopped fresh cilantro
        

Combine first 13 ingredients 
in a processor. 
Finely chop using on/off turns.  
Transfer to bowl. 
Cover and chill at least 4 hours.
Can be made two days ahead.  
Mix cilantro into salsa. 

This is a mild salsa.
