Fresh Corn and Black Bean Salsa

1 cup sweet corn, removed from cob
15 ounces organic black beans, drained
14 1/2 ounces diced tomatoes with green chiles 
(do not drain)
2 tablespoons diced sweet red pepper
2 tablespoons diced green pepper 
1 clove garlic, minced
3 teaspoons freshly squeezed lime juice 
1/2 teaspoon cumin
1/4 cup diced onion 
1/4 teaspoon dried cilantro
1/2 teaspoon sea salt
1/2 cup chopped green onion 


1. Place all ingredients, 
except the green onions, 
in a saucepan. 
Cover and simmer for 10 minutes. 
2. Place in a serving bowl 
and toss in the green onions. 
Serve hot or chilled.
