
Cilantro, lime juice, and pineapple tantalize the palate with hints of Mexico in every mouthful. 1/2 fresh pineapple, diced 2 fresh tomatoes, diced 1 cucumber, seeded and diced 2 shallots, minced 1 New Mexican chiles, minced 1/4 Cup minced cilantro 2 Tbsp. freshly squeezed lime juice 1 Tbsp. white wine vinegar 1 Tbsp. oil 1/2 tsp. salt In a 2-quart bowl stir together all ingredients until well blended. Cover and refrigerate at least 1 hour.
