Hot & Spicy

Red Chile Chipolte Salsa

  
4 Chipolte chiles (NO SUBST.)
1 Cup Boiling water
1 Tbsp. Oil
3/4 Cup Diced onion
3/4 Cup Bell pepper
2 Cup Fresh tomato, 
peeled -- diced
1/2 Tsp. Oregano

Combine chiles and boiling water
--let soak 30 min. 
Remove stems and seeds and chop.
In non-aluminum saucepan, 
heat the oil and sauté
the onion, sweet pepper, 
and chipoltes until onion
is slightly tender, 1-2 min.  
Add the chiles, 
soaking water, tomatoes, oregano and 
remove from heat.  
Process briefly in blender
until ingredients are well mixed,
but still chunky.

I don't find chipolte chiles that hot
but others tend to disagree.  
You'll have to make up your own
mind on this one.
