MEXICAN STYLE CLAMS
2 lbs. of clams
1 small onion
2 big tomatoes
2 Tbsp chopped parsley
3 serrano green chilies
1 Tbsp chopped cilantro
4 Tbsp olive oil
salt and pepper
Cut the onion, tomato,
and serrano pepper
into little pieces.
Wash the clams very well
in their shells.
Arrange them in a deep pan.
Fill it with two cups
of cold water,
add chopped tomato, onion
and serrano pepper.
Finally add the parsley,
the cilantro ,
the olive oil and the salt
and pepper until seasoned.
Put the pan on the flame
and put the cover on it,
let it boil smoothly,
stir the contents every
once in a while until it's
well done and the salsa
has completely consumed.
Serve it hot.
