Zesty Tomato-Garlic Soup
3 tablespoons olive oil
4-6 cloves garlic, minced or pressed
1 tablespoon Spanish-style paprika
8 cups tomato purée
2 tablespoons tomato paste
3 cups chicken or vegetable stock
1/2 cup red wine or sherry
2 teaspoons sugar
1 teaspoon to 1 tablespoon Tabasco
or Cholula hot sauce, to taste
Salt and pepper to taste
Garnish:
1 cup shredded cheddar or jack cheese
1/3 cup roughly chopped fresh cilantro
1. In a heavy saucepan, heat olive oil
over medium heat.
Sauté garlic until just turning golden;
be careful not to burn it.
2. Add paprika and stir mixture for 1 minute,
releasing the flavor but not scorching the spice.
3. Add the tomatoes, tomato paste, and stock;
mix well and bring to a boil.
4. Add wine or sherry and sugar
and simmer for 10 minutes.
5. Add hot sauce, salt, and pepper to taste.
6. Divide among warm bowls and
garnish with cheese and cilantro.
Serve hot.
