Shortening

Tostadas Compuestas
Chile, Meat-filled Tortilla Boats
2 cups shredded lettuce
6 Corn Tortillas*
2 tomatoes, chopped
3 cups Chile Con Carne*
1 1/2 cups grated sharp Cheddar cheese
1/2 cup chopped green onions
Heat 4 inches of shortening
in a heavy pan
on medium-high heat.
Fry tortillas in hot shortening
until crisp,
holding down in the center
with round wooden roller,
ladle, or similar object.
(Tortilla will form
into a cup shape.)
Drain on absorbent towels.
Fill each tostada with
chile con carne and top
with onions, lettuce,
tomatoes, and cheese.
