Aztec Corn

Chili peppers are available
in mild, medium, or hot.
Pick the level according
to your preference.
10 oz whole kernel corn
1/2 cup water
1/2 cup chopped red
and/or
green sweet pepper
1/4 cup chopped celery
8 oz reduced fat cream cheese
1/2 oz diced green chili peppers
1/4 tsp salt
dash black pepper
1 tbsp skim milk
In a medium saucepan
combine the corn, water,
sweet pepper, and celery.
Bring to boiling.
Reduce heat.
Simmer, covered
about 5 minutes
or until corn is tender
Stir in the cream cheese,
chili peppers, salt,
and black pepper.
If necessary,
stir in enough of the milk
to make of desired consistency.
Heat through
