Calabacitas Con Queso
5 zucchini squash, coarsely chopped
4 fresh green chiles,
roasted, peeled and diced
1 4-ounce can yellow corn kernels
1/2 red onion, diced
2 tomatoes, diced
Dash garlic powder
Dash salt and pepper
1 cup grated cheddar cheese
1. Place squash in saucepan,
cover with water and cook over medium heat
for 10 to 15 minutes.
Drain well.
2. Add chile, corn, onion, tomato,
and seasonings and reduce heat to simmer,
cooking another 10 minutes.
3. Add cheese, mix well,
cover and remove from heat.
Serve as soon as cheese melts.
